This vegetable omelette recipe is excellent for all those who suffer from high uric acid to include it at lunch or dinner.
Ingredients:
2 eggplants
2 onions
2 red peppers
2 green peppers
1 garlic clove
6 eggs
1/2 glass of skim milk
Salt, a pinch
olive oil, amount needed
Preparation:
Cut all the vegetables into small pieces and sauté them in a pot with a drizzle of olive oil and once they are cooked, pour them through a strainer to remove the excess liquid.
Then, in a bowl, beat the eggs with the skim milk and a pinch of salt and add the vegetables. Mix well and in a non-stick pan cook the omelette, a few minutes on one side and then turn it over and cook a few more moments. Remove from the heat and cut the portions.
