Scrambled eggs with peas, carrots and light corn

This recipe is designed very simple to make, healthy, that requires a minimum amount of elements and that you can make in a very short time. It is basically made with 3 vegetables, peas, carrots and corn and some condiments and light characteristic elements.

This light peas, carrot and corn scramble is ideal for all those who are putting into practice a diet to lose weight or maintenance because if you incorporate it in the right amounts it will provide you with a minimum amount of calories.

Ingredients:

»300g. of peas.

»300g. of carrots.

»300g. corn in grains.

" 1 clove garlic.

»1 large onion.

»1 small green morón.

" Sunflower oil.

" Salt.

" Oregano.

" Pepper.

" 2 egg whites.

Preparation:

First you will have to peel the carrots, boil them until soft, let them cool and cut them into small cubes. On the other hand, you will have to cut the garlic clove, onion and red pepper very finely and sauté it in a hot pan previously greased with sunflower oil, you will have to cook the vegetables until they are tender.

Once the vegetables are cooked you will have to add the peas, carrots and corn, mix well and cook for 15 minutes. Finally add the egg whites and season to taste with the salt, oregano and pepper, mix well and cook until the white is cooked. You can eat it alone or use it as a garnish.
