Light base dough for noodles or gnocchi

One of the dishes that we miss the most when we diet are pasta. Today I bring you a special recipe to prepare a light base dough for noodles or gnocchi that will only provide 150 calories in a normal small portion.

The colored pastes also provide some B vitamins, since vegetables such as spinach (green), carrot (orange), tomato (red or orange) are used in their preparation.

Ingredients:
400 g of superfine whole wheat flour
200 g of common wheat flour 0000 (non-rising)
2 claras

3 tablespoons of oil
A pinch of sea salt and a little warm water.

Procedure:
On the table, place the flours and mix them together with the egg, oil, salt and the warm water necessary to form a dough. Knead and separate into buns.

These buns have to be stretched until they are as stretched as possible and then cut them like noodles or prepare gnocchi.

The trick of pasta is not the dough itself, but with which you accompany it. A simple pesto is preferable to tomato sauce made with oil and other high-fat elements.
