Low calorie zucchini omelette

This tortilla is exquisite, ideal to share with your family, it is so rich that no one will believe you that it is low in calories, it yields 4 servings and you can accompany it with turkey, chicken or grilled red meat

Ingredients

4 round zucchini
Egg whites 2
1 small bell pepper
1 small onion
1 drizzle of olive oil
Sal Island
Oregano

Preparation

Cook the zucchini in plenty of salted water and reserve it, in a food processor place the onion and pepper cut into pieces, the egg whites and the olive oil and process everything until there is a juice.

Put the zucchini with a little oregano and the processed juice with a pinch of salt in a baking dish, brushed with olive oil and hot.
Bake in a strong oven until it is curdled and golden.
