This is an ideal light recipe for those people who are on a diet to lose weight or maintenance and who like squash, it is very easy to make and requires a minimum amount of elements. Those yes, you must respect the elements that it carries in a strict way so that it is a light cake.

This light pumpkin pie can be made at any time of the year because you can eat it both hot and cold, you can use it as a starter or as a main dish at any meal. Now, it is not recommended that you eat this cake in excess because you will be incorporating more calories.

Ingredients:

> 2 kilos of pumpkin.

> 50g. grated light cheese.

> 2 egg whites.

> Salt.

> Pepper.

> Parsley.

> 1 light pascualina cover.

> Vegetable spray

Preparation:

First you will have to boil the pumpkin and let it cool. Then you will have to remove the skin, the pulp and the seeds and process it well until you achieve a puree that does not contain lumps. Once you have achieved the puree you must add the grated light cheese and the egg whites and mix well.

Finally you will have to season with salt, pepper and finely chopped parsley and mix the preparation again. Place the pascualina lid on a pan previously sprinkled with vegetable spray, turn over the preparation and spread it neatly over the entire surface. Cook in a moderate oven for 35 minutes.
