Chia pudding, a delicious anti-inflammatory breakfast

Chia pudding

If you plan on substituting your morning coffee or cereal for something healthier, you'll be interested to know that chia seeds and coconut milk make a great breakfast tandem. It is a combination that should be taken into account by followers of the Paleolithic diet, as well as by anyone interested in eating a healthy and balanced diet in general.

This tandem satiates the appetite thanks to its high fiber content (so it is good for losing weight) while it benefits us with the anti-inflammatory power of omega 3 fatty acids, but what is the best way to take them? Here we explain how to prepare a delicious chia pudding that will do you great in the morning.

Ingredients:
1/4 of cup of chia seeds
1 cup coconut milk
1/2 tablespoon of honey

Preparation:
Mix the chia seeds, coconut milk, and honey in a small bowl and let the mixture rest in the refrigerator overnight. The next morning, take it out and check that the pudding has thickened and the chia seeds are gelled.

If everything is OK, proceed to add your favorite fruit or nuts on top. In the photo, it has 1/4 cup of fresh mango cut into small cubes, but in this sense, anything that comes to mind (strawberries, peaches ...) will add points to the pudding.
